Oysters Rockefeller Omelet

I tend to be an overcommitter,

meaning when I commit to something I go all in and then some.

One of the many many things I love about my husband is how he helps to keep me in balance.

For example, while I tend to hyper focus on nutrition: reading all the research, insisting on no sugar, only good carbs, little or no meat, lots of greens, no dairy, checking ph and alkalizing our bodies, etc. so we can live a long time together, he reminds me it’s ok to “live our life” while we do it.

I love that it’s not give and take, it’s a give and give relationship.

I drag my sleepy butt to the gym with him … and he walks with me on the beach after.

He makes a healthy smoothie for me … and also eats the sugar free desserts, homemade granola, and fish I cook for him.

And after a week of doctor appointments almost every single day,

he still smiles,

tells me I’m beautiful,

takes me to brunch

and reminds me it’s okay to have this Oysters Rockefeller omelet 😭😍🤤
